The Aging
Cellar
Built with ancient construction techniques.
The bioarchitecture project was designed by Ernesto Illy in 2010. Large stone gabions support the hillside where the cellar is located, while arches made of solid terracotta bricks, chestnut beams, and clay tiles eliminate the use of reinforced concrete and steel, preventing the influence of magnetic fields.
Here, in harmony with the environment and the building, our wine undergoes its aging process, which takes place in large oak barrels of various sizes, ranging from 10 to 54 hectoliters, and in French tonneaux that hold between 5 and 7.5 hectoliters.

The Choice of Concrete.
Since the beginning, we have utilized both brushed and resin-coated concrete tanks for fermentation and storage.
This combination is ideal for respecting the wine’s identity, promoting controlled micro-oxygenation, and the thermal inertia characteristic of concrete, which helps during fermentation and storage to avoid temperature fluctuations.
